For St. Patrick’s Day (March 17th) those with Irish roots and those that wish they were Irish (an old Irish punchline), find their own ways to celebrate the Gaelic culture. St. Patrick's Day has evolved over the centuries from an Irish religious holiday to a secular event in the United States. Making the most of the holiday usually includes wearing green, eating Irish dishes, hoisting a pint of Guinness and perhaps a parade.
My St. Paddy's Day celebrations have also changed over the years. As a kid, I begged my parents for a trip to get a Shamrock Shake. As a young adult, there were too many green beers at the local pub (and too many regrets the next day). As a mature person, I now have a Guinness and cook up some corned beef and cabbage.
Regardless of how you celebrate, everyone is Irish for the day. So why not make some easy (and budget friendly) foods that celebrate the Irish. I’m always excited since so many traditional Irish dishes include potatoes and cabbage (one of my favorites year round).
